There is a hot and cold water fountain in Terminal 3 after security between the entrance to the male and female toilets
I have attached the photos of the water fountain in T3 at Las Vegas McCarran airport.

Water refill station after security checkpoint for A/B gates in Terminal 1. Take a left past security check lines and look for restrooms.

At Terminal 3, all restrooms seem to be equipped with a water fountain and bottle filling station.
