Received from airport after I sent them feedback
Regretfully, water in Santorini is not potable but if this changes in the future we’ll further evaluate it in order to accommodate passengers’ needs in the most convenient way.
However, please note that you may find water bottles at the price of 0.60 cents as indicated at the Food & Beverage stores’ pricelists.

Fraport GreeceNo drinking water fountains in the new departures building. Only warm water is available in the toilets, so you have no option but to buy water in plastic bottles, at ridiculous prices.

They charge 5.50 euros for a litre of water in Santorini airport. That’s crazy. Outside the airport you get 2 litres for 1 euro but you can’t take it through security. It’s time this farce was stopped. All airports should provide free drinking water.
